Apple Crisp (Crockpot)

- 3-4 cups granny smith apples, peeled and sliced
- 1/3 cup packed brown sugar
- 1/4 cup all-purpose flour
- 1/4 cup quick oats
- 1/3 cup vanilla pudding mix (make sure it's the "Cook & Serve" - NOT INSTANT)
- 1/2 tsp. cinnamon (or to taste)
- 1/3 cup pecans, chopped
- 1/3 cup pecans, whole
- 1/4 cup very cold butter, cut into cubes
- Vanilla Ice Cream for serving
Lightly spray the inside of your crockpot with cooking spray.
Peel and slice your apples and add them to the prepared crockpot.
In a medium bowl, mix together the brown sugar, flour, oats, pudding mix, cinnamon and chopped pecans until well blended. Using your fingers or a pastry blender, add the butter cubes a few at a time and mix well to incorporate until the mixture resembles coarse crumbs.
Pour this mixture over the apples and spread to the sides to cover the apples well. Top with the whole pecans.
Cover and cook on low for 2 1/2 to 3 1/2 hours or until the apples are tender. Enjoy with some vanilla ice cream on the side!
