Cranberry Salad

- 1/2 bag of fresh cranberries, approx. 6 oz.
- 1 cup sugar
- 1/2 cup water
- zest from one orange
- 1/2 cup orange juice
- 1/2 tsp. ground ginger
- 1/2 cup celery, finely diced
- 1/2 cup pecans, chopped
- 1 medium apple, peeled and diced
- 1 small box of strawberry Jell-O
Add your water, sugar and cranberries to a medium saucepan. Bring to a boil over med/high heat, stirring frequently. Once it comes to a boil, turn the heat down to medium/low and simmer for 15 minutes. The water will evaporate out and the mixture will become thick, almost like a jam consistency.
After 15 minutes, turn off the heat and add all of the other ingredients. Stir well to combine and dissolve the Jell-O crystals.
Pour into a shallow bowl and cover with plastic wrap. Refrigerate overnight to allow time to set. Serve alongside your turkey dinner, or as a dessert with a dollop of whipped topping. It's delicious either way! Enjoy!
