Classic Vanilla Pudding

Here's what you need:

  • 1 1/2 cups sugar
  • 5 Tbsp. all-purpose flour
  • 4 cups whole milk
  • 4 egg yolks, beaten
  • 2-3 tsp. vanilla extract or vanilla bean paste (to your taste!)

Add sugar and flour to a heavy saucepan and whisk to break up any flour clumps. Add your milk and stir to dissolve the sugar. Begin to heat over medium heat. Lightly beat the egg yolks in a small bowl and set aside. Continue to heat the milk mixture over medium heat until it just starts to steam. Remove about 1/2 cup and slowly pour it into the egg yolks while stirring them. This will temper the eggs. Now slowly pour the egg mixture into the saucepan and whisk constantly. Whisk the pudding mixture constantly until it comes to a full rolling boil. This should take about 15 minutes. Be sure to stir constantly so the mixture doesn't stick to the bottom and cause lumps in the pudding. Once it comes to a full boil, remove from heat and stir in your vanilla until it's fully incorporated. 

Pour into a serving bowl and allow to cool. It will set up more as it cools. You can serve warm or chilled. It's delicious either way! Enjoy!
