Chocolate No-Bake Cookies

- 1/2 cup butter (1 stick)
- 2 cups sugar
- 1/4 cup cocoa powder
- 1/2 cup milk
- 1/4 cup peanut butter
- 1 tsp vanilla extract
- 2 cups Quick Cooking Oats
Be sure to have all of your ingredients measured out before you begin. This will make it go much easier for you as things move fast and you won't have time to measure as you go. :)
Place a large piece of parchment paper on your table or counter.
Add your butter to a large saucepan and melt over low heat. While the butter is melting, sift your sugar and cocoa powder into a medium bowl to remove any clumps. Once the butter is fully melted, add in your sugar, cocoa and milk and stir well to combine.
Turn the heat to medium and cook, stirring constantly, until the mixture comes to a full rolling boil. As soon as it comes to a full boil, set your timer for 2 minutes and boil for 2 minutes exactly.
As soon as 2 minutes is up, remove from the heat and add the peanut butter and vanilla. Stir quickly to dissolve the peanut butter fully and then add in your oats. Give it a quick stir to incorporate the oats well and then quickly spoon out onto the parchment paper. Allow to cool and set. Enjoy!
