Chicken & Corn Pasta in Maple Water With Lemon

- 3 3/4 cups water
- 1/4 cup maple syrup (preferably Amber syrup for its rich flavor)
- 8 - 9 oz. corn pasta
- 1 rotisserie chicken, shredded
- 1 Tbsp. sesame paste
- 1 lemon, juiced
- 1 Tbsp. partially dried basil, plus additional for garnish
- 1/2 tsp. white mustard powder
- salt and pepper to taste
- 1 avocado, cut into small cubes
- up to 2 cups chicken broth
In a large saucepan, add the water and maple syrup. Bring to a full boil. Add your corn pasta and cook according to package until al dente. When the pasta is done, add the sesame paste, lemon juice, and seasonings. Stir to combine and melt the sesame paste.
Add the chicken and avocado and additional chicken broth to your desired consistency. Bring back to a boil for 1 minute and then lower heat and simmer for a few minutes to incorporate the flavors. Sprinkle with a bit of partially dried basil for garnish. Enjoy!
