Chicken Caesar Salad

- 3/4 lb. chicken tenders (about 6 total)
- 2 Tbsp. avocado oil (or oil of choice)
- all-purpose seasoning (I like the Montreal steak seasoning for this)
- 1 cup mayonnaise (I like Duke's or Helmann's for this)
- 2 garlic cloves, pressed (or 1 tsp. garlic powder)
- 2 Tbsp. lemon juice, freshly squeezed from 1 lemon (zest before juicing and keep for garnish)
- 2 1/2 tsp. Dijon mustard
- 1 tsp. Worcestershire sauce
- 1/2 cup parmesan cheese, freshly grated
- 3/4 tsp. salt
- 1/4 tsp. ground black pepper
- 1 - 9 oz. bag of chopped Romaine lettuce (or lettuce of your choice)
Heat your oil in a skillet over medium/high heat. Season your chicken tenders with the all-purpose seasoning. Cook for 4-5 minutes on each side or until the chicken is fully cooked and golden. Chop or cut up into bite size pieces.
In a canning jar or small bowl, combine mayo, garlic, lemon juice, mustard and Worcestershire sauce and whisk well or use an immersion blender to blend. Add the cheese, salt, and pepper and blend with an immersion blender to mix well and chop up the cheese. If you like your cheese in larger pieces, you can simply mix it in with a spoon.
Divide your lettuce into two serving bowls and top with the chicken. Drizzle your dressing over the top and garnish with a sprinkle of lemon zest. Enjoy!
