Chewy Granola Bars (No-Bake)
Jul 12, 2024Here’s what you need:
- 2 Tbsp. Butter
- 2 Tbsp. Oil (I used Avocado oil)
- 2-3 Tbsp. Creamy Peanut Butter
- 14 oz. bag of Marshmallows
- 1/4 cup Honey
- 4 3/4 cups Rice Krispies
- 2 1/2 cups Quick Oats
- 1/2 cup Graham Cracker Crumbs
- 1/4 cup White Chocolate Chips
- 1/4 cup Chopped Dark Chocolate Bar (approx. 1/3 of a bar)
- 1/2 cup Coconut
- 1/2 cup Chopped Walnuts
Using a food processor, chop your dark chocolate and white morsels until they resemble small chunks. Pour into a small bowl and set aside.
Using the food processor, chop your walnuts slightly until they are small pieces. Pour into a small bowl and set aside.
Using the food processor, chop your graham crackers (about 1/2 a sleeve) until they resemble crumbs. Pour into a small bowl and set aside. (you can pour the chocolate, nuts and graham crumbs all into the same bowl to cut down on dishes.)
Add your butter, oil, peanut butter, marshmallows, and honey to a large pan. Heat over medium heat until all is melted. Stirring constantly.
Reduce heat to low and add all remaining ingredients to the pan and stir well to combine. You can turn the heat off if you think the pan is getting too hot.
Once fully combined, pour out onto a lined baking sheet (with sides) and press down lightly creating one large rectangle. Allow them to cool and then cut into bars. Enjoy!
**NOTES:
1. In the video, I added the marshmallows after the graham crumbs, nuts and coconut. You can do it either way. :)
2. You can add a variety of things to this...raisins, peanuts, cranberries or other dried fruit. If you add a lot more, you may want to add additional butter, peanut butter or marshmallows to make sure it's not too dry.
