Cheesy Sausage & Corn Dip

- 1 lb. sausage or ground meat of choice
- 2 blocks of cream cheese (8 oz each)
- 10 oz. can of Rotel (diced tomatoes and green chilis
- 15 oz. can of corn or Mexican corn
- fresh shredded cheddar for topping (about 1 cup)
Preheat your oven to 350F.
In a medium saucepan, cook/brown your meat until it’s fully cooked. Drain grease if needed.
Add your cream cheese, Rotel, and corn and cook over medium heat until the cheese is fully melted, and all ingredients are combined.
Now pour your cheese mixture into an oven safe dish and top with the shredded cheddar.
Bake in your pre-heated oven for about 20 minutes or until the cheese is melted and golden. You may need to broil on low the last few minutes to really get the cheddar toasty.
Enjoy with your favorite tortilla chips or crackers, pretzels or crusty bread.
