Cast Iron Steak
Jul 30, 2024Here's what you need:
- Steak of your choice, room temperature
- 4 Tbsp. butter
- 2 Tbsp. avocado oil (or oil of choice)
- 1 generous tsp of minced garlic (optional)
- seasoning of choice
Heat your cast iron skillet until it starts to smoke.
Season your steak with seasoning of choice, making sure to season all sides.
Add about 2 Tbsp. avocado oil (or oil of choice) to the pan. When it starts to "shimmer" and is hot, lay the "fat cap" side edge of the steak on the pan. Let it sear for about 30 seconds. Now lay the steak in the skillet and let it sear for 2 minutes. Turn it over and let the other side sear for two minutes.
Now add 2 Tbsp. butter and the garlic to the pan. Tip the pan and, using a spoon, baste the steak with the butter and garlic. Allow to cook for 2 minutes, basting occasionally. Turn the steak over and add 2 more Tbsp. of butter. Baste the steak again several times for 2 more minutes.
Using a meat thermometer, check the temp after both sides have cooked for a total of 8 minutes (4 minutes on each side). The internal temp should be 140 - 145 degrees for a medium steak. Allow extra minutes if you prefer a more well-done steak. (see temps below)
Remove from the pan and allow to rest for around 10 minutes. Enjoy!
NOTES**: I topped mine with the homemade Pimento Cheese I made and it was amazing!
Internal temps for different levels of doneness -
Rare: 120°–125°
Medium Rare: 130°–135°
Medium: 140°–145°
Medium Well: 150°–155°
Well: 160°–165°
