Brazilian Pao de Queijo - Cheese Bread

Here’s what you need:
  • 3 cups YOKI flour (see link below or click here)
  • 1 cup milk
  • 1/2 cup water
  • 1/2 cup oil
  • 1 tsp kosher salt
  • 1 egg
  • 1 cup grated cheese (Parmesan or other hard cheese)
This was such a fun video to make with my oldest son, Nicholas, who was born in Brazil. :)
 
In a saucepan, bring to just a slight boil the water, oil and salt.
 
In a large mixing bowl, add the YOKI flour and milk and then add the boiling water/oil mixture.
 
Mix with a large fork until it all comes together. Add your egg and mix well. The dough will be wet.
 
Add your cheese and begin to knead in the bowl. Add more YOKI flour (1/4 cup at a time), if needed, to reach the consistency you’re looking for.
 
Drop by the spoonful for a more rustic look or roll into balls and place on a parchment-lined baking sheet. Bake in a preheated 400-degree oven for 16-18 min or until they are golden brown and sound hollow to the tap. Enjoy!
 
NOTE ~ You can roll these out and freeze them and then bake as needed. Store them in an airtight container in the freezer.
