Baked Feta Spaghetti Squash

- 1 Spaghetti Squash
- 1 block of Feta cheese
- 10 oz. of cherry tomatoes
- Olive oil of your choice
- Balsamic vinegar of your choice
- All purpose seasoning of your choice (I used the B. T. Leigh's "Somethin' for Everything")
- Onion powder to taste
- Coarse salt (optional)
- 1/2 cup finely chopped walnuts, divided (optional)
Preheat your oven to 400 degrees. Line a baking sheet with parchment paper.
Cut your squash in half and clean out seeds. Place the two halves on the lined baking sheet.
Drizzle both halves with olive oil and season well. Drizzle your balsamic vinegar over both halves.
Place 1/2 of the feta cheese in each piece of spaghetti squash. Sprinkle 1/2 of the walnuts on each piece of cheese. Cover the cheese with tomatoes and drizzle a bit of olive oil over the top. Sprinkle with a bit of coarse salt.
Bake in your pre heated oven for 40-45 minutes, until the squash is tender.
Remove from oven and, using two forks, scrape the squash and mix together with the cheese and tomatoes. You can serve it right out of the rind or plate it. Enjoy!
This can be a complete meal, or you can add additional protein like steak or chicken on the side. Makes approx. 2-3 servings.
