Baked Coconut Pie

Here's what you need:
- 3 eggs
- 1 cup of sugar
- 2 Tbsp. brown sugar
- 1 stick of butter, melted
- 3 tsp. white vinegar
- 1 cup of shredded coconut, sweetened
- 1 tsp. vanilla extract
- 1 - 9 inch pie crust
Preheat your oven to 350 degrees.
In a large bowl, combine the eggs with both of the sugars. Mix well until incorporated. Add butter, vinegar, coconut, and vanilla. Mix well to combine. Pour into your unbaked pie crust and bake in your preheated, 350 degree, oven for 40 minutes until golden brown and set in the center.
Allow to cool a bit and serve with whipped topping or ice cream on the side. Enjoy!
**NOTES:**
Variations:
- You can use 1 cup of chopped pecans in place of the coconut
- You can reduce the coconut to 3/4 cup and add 1/2 cup chopped pecans
- You can add about 1/2 cup of drained, crushed pineapple with the coconut.
