Apple Cake w/Caramel Glaze Icing

Here's what you need:
For the Cake:
- 1 cup sugar
- 1/4 cup butter, softened
- 1 large egg, beaten
- 1 1/4 cups all-purpose flour
- 1/2 tsp. ground nutmeg
- 1/2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1/8 tsp. salt
- 1 cup apples (any kind), shredded
Preheat your oven to 350F. Cream sugar and butter in a large bowl. Add beaten egg and mix well. Add shredded apples and mix to combine. While it's mixing, sift together the dry ingredients and slowly add to apple mixture. Mix to combine and spread into an 8x8 or 9x9 greased pan. Bake in your preheated oven for 40-45 minutes.
For the Caramel Glaze Icing:
- 1/2 cup sugar
- 1/2 cup brown sugar, packed
- 1/2 cup heavy cream
- 1/2 cup butter, melted
- 1 tsp. vanilla
Add all ingredients to a small bowl and whisk well to combine and dissolve the sugars. Pour over the cake while it's still slightly warm. Enjoy!
