BLT Pasta!

This recipe was inspired by the dish at Nash's Restaurant in North Vernon, IN! 

Here's what you need: 

  • 6-7 oz. of pasta of choice (a tube pasta works the best), cooked al dente
  • 1 cup cherry tomatoes, diced
  • 3/4 lb. thick cut bacon, cooked and chopped
  • 1/2 - 3/4 cup fresh shredded cheddar cheese, plus extra to garnish
  • 2 - 6.7 oz. jars of Rao's Sun-Dried Tomato Pesto sauce
  • 3 - 4 oz. of fresh spinach
  • partially dried basil for garnish

Cook your pasta to al dente and drain. Add tomatoes, bacon and sauce. Mix well to combine and coat the pasta. Add your cheese and give it a mix. Add the spinach and toss to incorporate. 

You can serve as is with a garnish of shredded cheese and partially dried basil on top, or you can add to an oven safe dish and top with shredded cheese. Bake at 400F until the cheese is melted and golden. Garnish with partially dried basil and ENJOY!
