BBQ Chicken Pizza

 
Here's what you need:
 
  • 1 tbsp. extra-virgin olive oil to grease your iron skillet
  • 1/2 lb. boneless skinless chicken breasts, cut into 1" pieces
  • Somethin' for Rubbin' BBQ Seasoning from B.T.Leigh's Sauces and Rubs or other BBQ seasoning
  • Pizza dough, at room temperature (I used store bought)
  • 2 tbsp. BBQ sauce, plus more for drizzling (I used B.T.Leigh's Sauces and Rubs Somethin' Somethin' Sauce)
  • 1/2 c. shredded cheddar
  • 1/2 c. shredded parmesan
  • 1/3 cup queso fresco crumbled cheese
  • 1/4 small red onion, thinly sliced
  • Ranch dressing, for drizzling (optional)
 
Preheat your oven to 450 degrees.
 
Cook your chicken in the manner you like most. I seasoned mine with the Somethin' for Rubbin' seasoning and cooked it in the air fryer at 400 degrees for about 25 min. You can also pan fry it in olive oil.
 
While the chicken is cooking either make your dough or roll out the readymade dough and line the bottom of your iron skillet bringing the dough up the sides just a bit.
 
Pour about 2 Tbsp. of BBQ sauce (I used the Somethin' Somethin' BBA sauce from B.T. Leigh's) and using a pastry brush, brush it evenly over the bottom of the crust. Slice your red onion into thin rounds and place those over the BBQ sauce.
 
When the chicken is fully cooked, shred or chop it into pieces and add on top of the onions. Sprinkle with the cheddar, parmesan and queso fresco cheeses.
 
Bake in the 450 degree oven for 20-25 minutes until the crust is golden brown. Drizzle with BBQ sauce and serve. Enjoy!
