Baked Mac-n-Cheese

Here’s what you need:
 
1 large container cottage cheese (large or small curd)
1  small container ricotta cheese
2 eggs
1-2 cups milk or cream (more if you like it creamier)
About 4 cups of shredded cheeses (any blend you like) plus some for topping
Crushed potato chips for topping
2 boxes penne pasta (or pasta of your choice)
 
Cook your pasta according to package (al dente). In a large bowl, mix together cottage cheese, milk, ricotta and eggs until blended.
 
Add your shredded cheeses and mix well. Add your pasta and mix to coat and combine.
 
Pour into a greased, deep 9x13 dish and top with shredded cheese.
 
Now top with your crushed potato chips and then a bit more cheese on top of that.
 
Bake in a pre heated 350 degree oven for 20-30 minutes until the cheese is browned on top.
 
This will easily feed a crowd and can be halved to serve 4-6 people.
 
Serve immediately and enjoy!
