Amish Broccoli Salad
Here’s what you need:
- 1 large head fresh broccoli, cut into bite size pieces
- 1 large head fresh cauliflower, cut into bite size pieces
- 1 cup Avocado Mayo
- 1 cup Greek Yogurt
- 1 tsp. Salt to taste
- 1/2 cup granulated sugar
- 1 cup shredded cheddar cheese
- Bacon, cooked and crumbled or chopped into small pieces
Add your chopped broccoli and cauliflower to a large bowl. Toss to mix together.
In a separate bowl, mix together mayo, yogurt, salt and sugar. Stir well to combine and dissolve sugar. Mixture should be creamy.
Pour the mayo mixture over the broccoli and cauliflower and stir to combine. Add your shredded cheese and bacon and mix well. Enjoy!
NOTES** -
1. You can use sour cream in place of the yogurt, if you like.
2. You can reduce the sugar or use a substitute if you are watching your sugar intake.
